New technologies without forgetting tradition

The process of vinification is the one which initiates the way of elaboration of big wines. In our house, we chose from the beginning, the most natural techniques in the elaboration in order to enjoy the healthier products the better. In this way we've been reducing progressively the doses of SO2, the only chemical product used in the hole process; furthermore, we've reduced the use of the washes in fermentation in order to give free way to the autochthonous washes. One of the most important things in vinification and in the whole process of aging is the control of temperature.
